Mini Egg Muffins

Ingredients: 2 eggs

2 Tbsp cottage cheese (1%)

1-2 tsp red, orange or green pepper, chopped

1-2 tsp onion, chopped 1/2 tsp Italian seasoning

Pepper, to taste

Cheese (any variety), optional

Directions: Mix all ingredients in a bowl. Spoon into mini muffin tins sprayed with avocado oil to prevent sticking. Top with cheese if desired. Bake at 350 F for 10 minutes or until fully cooked. Enjoy!
