Veggie Spelt Salad

Ingredients:

1 cup 100% spelt pasta, cooked according to package directions

1/8 cup cucumber, chopped

1/8 cup orange peppers, chopped

1/8 cup onion, chopped

1/8 cup carrot, shredded

1-2 Tbsp olive oil

1-2 Tbsp reduced balsamic vinegar

Directions:

Mix all ingredients together. Enjoy!
