Coconut Blueberry Oatmeal Bake
Ingredients: 1 1/4 cups frozen blueberries 1/2 cup rolled oats 1/3 cup + 1/4 cup unsweetened almond milk 1.5 Tbsp honey 1 Tbsp avocado oil
1 Tbsp chia 1 tsp vanilla extract 1/8 cup shredded unsweetened coconut 1/4 tsp cinnamon
Directions: Heat oven to 365 degrees F. Lightly spray bread loaf pan to prevent sticking; set aside. Combine blueberries and rolled oats in a bowl. Pour evenly into prepared pan. In a mixing bowl, whisk together 1/3 milk and all remaining ingredients. Spread this mixture evenly over the blueberry layer and stir quickly. Top with remaining 1/4 milk. Bake for 35 minutes, or until golden. Remove from oven and allow to sit for 5 minutes before cutting. Served topped with fresh blueberries and pure maple syrup, if desired. Enjoy!
