Peanut Butter Banana Oatmeal


Ingredients: 1 large very ripe banana, peeled and chopped 1 tsp coconut oil 1/2 Tbsp natural peanut butter 1/2 cup oats 1 tsp chia seed 1/2 cup unsweetened almond milk 1/2 cup water 1 tsp cinnamon 1/4 tsp nutmeg pinch of salt 1 tsp vanilla extract optional toppings: peanut butter, nuts, cinnamon, hemp hearts, cocoa nibs, pure maple syrup.

Directions: In a pot over medium heat, cook the banana and coconut oil for about 5 minutes, stirring frequently. Add in 1/2 tbsp peanut butter, oats, chia, milk, spices, and salt. stir. Simmer and stir often for 8-10 minutes. Remove from heat and stir in vanilla. Add additional toppings if desired. Enjoy!
