Strawberry Aroma
Have you ever wondered about the smell of strawberries? The chemicals (yes, chemicals) responsible for the smell of strawberries are furaneol and methoxyfuraneol. As the fruit ripens the concentration of these chemicals increases. As you may have noticed, the riper the strawberry the stronger the yummy smell of the berry. And of course, the sweetness of the strawberry increases (by almost double) and the acidity decreases as it ripens as well. Who knew there was so much chemistry involved in a strawberry? ;)
