Vegan Molasses Cookies


I originally found this recipe in the "Oh She Glows Every Day" cookbook but the recipe is also on the Oh She Glow blog. I followed the recipe closely with a few modifications.

Vegan Molasses Cookies

Ingredients:

1/2 Tbsp ground flax mixed with 2 tablespoons water 1/4 cup coconut oil 1/4 cup coocnut sugar 2 Tbsp blackstrap molasses 2 Tbsp maple syrup 1/2 tsp vanilla extract 1 tsp ground ginger 1/2 tsp ground cinnamon 1/2 tsp baking soda 1/4 tsp sea salt 1/4 tsp ground cloves 1 & 1/4 cups spelt flour 2-3 Tbsp turbinado sugar, optional (but I highly recommend it)

Directions:

Preheat oven to 350 F. Line baking sheet with parchment paper. Mix ground flax and water in a mug and set aside for a few minutes until flax absorbs all the water. In a large bowl, use an electric mixer to combine coconut oil, coconut sugar, molasses, maple syrup, vanilla, and flax mixture. Mix well. Add ginger, cinnamon, soda, salt, and cloves to mixture. Mix well. Combine flour in parts until incorporated well into mixture. Do not over mix. Shape dough into small balls and roll in a bowl of turbinado sugar, if desired. Place balls on cookie sheet. Bake for 10 minutes for a softer cookie (that's what I did) or 12 minutes for a crispier cookie. Once out of the oven leave cookies on the pan for a few minutes before transferring to a cooling rack. Let cookies cool for 10 - 15 minutes (if you can). Enjoy!
