Nitrite chemistry you NEED to know. * Okay so you must have heard about limiting eating foods containing nitrites because it could lead to cancer? If you don't know the nitrites in many lunch meats are used as a preservative. * When we consume the food containing the nitrites our bodies convert it to nitrosamines which IS a known carcinogen. A bit scary, right? * Before you get too scared this conversion doesn't happen when vitamin C (ascorbic acid) or vitamin C in its salt form is present. Many companies add this into the foods containing nitrite compounds. And if they don't just make sure you add some vitamin C (oranges, peppers, etc) if you eat foods containing nitrites. * Again, these scientific posts are just facts.
