Cheesy Butternut Squash Bake


Ingredients:

2 cups Roasted butternut squash, cubed

1 Tbsp Red onion, chopped

2 cloves of garlic, grated

1 Egg

1/16 cup Cheddar cheese

1/16 cup Parmesan cheese


Directions:

Fry the onion and garlic until the onion is translucent. Mash (I used a potato masher) squash, onion, garlic, egg and Cheddar cheese together until it is completed mixed and squash is no longer in cubes. Add mixture to a small oiled baking dish and top with Parmesan cheese. Cook at 375 F for 20 minutes or until cooked. Enjoy!
