Baked Blueberry Donuts


Ingredients: 1/4 cup water 1 tsp apple cider vinegar 1/4 tsp pure vanilla extract 1/3 cup pure maple syrup (or liquid sweetener of choice) 3 1/2 tbsp avocado oil (or other oil) 1 cup spelt flour, sprouted 1/4 tsp salt 1 tsp baking powder Pinch of cinnamon 1/2 cup blueberries, fresh or frozen Turbinado sugar (optional)


Directions: Combine first 5 ingredients in a bowl and set aside. Grease a donut pan (or mini muffin pan). Preheat oven to 350 F. Add all remaining ingredients (except berries) into bowl of wet ingredients. Mix well but don’t over mix. Carefully stir in blueberries. Bake 10-12 minutes or until donuts have risen and no residue of wet batter remains. Let sit 5 minutes before removing from the pan. Sprinkle with sugar, if desired. Makes approximately 6 donuts.
