Carrot Cake Cookies



Carrot Cake Cookies Ingredients:

1 cup butter, softened 1 cup brown sugar 1/2 cup granulated sugar 2 eggs 1 tsp vanilla extract 1 1/2 cup flour 1 tsp baking soda 1 tsp cinnamon 1/4 tsp nutmeg 1/2 tsp salt 1 cup shredded carrots 1/2 cup shredded coconut, unsweetened 2 cups old-fashioned oats


Directions: Preheat oven to 350 F and line a baking sheet with parchment. In a bowl, beat butter and sugars until light and fluffy using an electric mixer. Add eggs and then add vanilla; mix. In a separate bowl, mix flour, baking soda, cinnamon, nutmeg, and salt. Add dry ingredients to wet mixture until well-combined. Stir in carrots, coconut, and oats and mix until just combined. Scoop dough onto baking sheet. Bake for 13 to 15 minutes or until done. Allow to cool on cooling rack. Enjoy!
